Carrot Cake Cookies Supreme

When we were on Quadra Island BC last summer, we happened by the best of good fortune to be in the bakery at the Heriot Bay shopping centre and had THE most delicious carrot cake cookies...they don't have them in every day so we might never have discovered them. Being a carrot cake lover, I rolled up my internet and cookbook research sleeves, and got busy putting together a recipe that might do them justice. There are little tricks like mixing the shredded carrots in a little brown sugar first to soften the carrots as cookies do not cook as long as cake. The results were delightful.
